Description

A quick and flavorful teriyaki chicken bowl that’s perfect for busy weeknights.


Ingredients

  • 1 ½ lb boneless, skinless chicken thighs
  • 1 cup teriyaki sauce
  • 1 tablespoon vegetable oil
  • 2 cups cooked white rice
  • 2 cups broccoli florets, steamed
  • 1 cup shredded carrots
  • 1 ripe avocado, sliced
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds

Instructions

  1. Heat vegetable oil in a skillet over medium-high heat.
  2. Add chicken thighs and cook for 4–5 minutes per side until fully cooked.
  3. Pour teriyaki sauce over the chicken and simmer for 2–3 minutes.
  4. Remove chicken from heat and slice into strips.
  5. Mix mayonnaise, sriracha, and sesame oil in a small bowl.
  6. Assemble bowls with rice, broccoli, carrots, and avocado.
  7. Top with sliced chicken, drizzle with spicy mayo, and sprinkle with sesame seeds.

Notes

Use leftover or pre-cooked rice to save time. You can prepare the spicy mayo in advance.
