Description

Air-Fried Korean Chili Cauliflower, also known as Gochujang Cauliflower, is a crispy, sweet, and spicy dish that delivers big flavor with a healthier twist. Perfect as an appetizer or a bold side dish!


Ingredients

  • 2 medium heads cauliflower (cut into florets, about 650g)
  • 1 ½ cups gluten-free flour blend (or brown rice flour)
  • 2 tbsp cornstarch
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 tsp garlic powder
  • ¼ tsp black pepper
  • 1 ¾ cups cold seltzer water
  • ½ cup maple syrup (or agave nectar)
  • 6 tbsp soy sauce (low-sodium optional)
  • ¼ cup light brown sugar
  • 3 tbsp minced garlic (23 cloves)
  • 2 tbsp minced fresh ginger
  • 2 tbsp apple cider vinegar
  • 1 tbsp toasted sesame oil
  • 5 tbsp Korean chili paste (Gochujang)
  • ¼ cup mirin
  • 2 tbsp cornstarch
  • 1 tbsp toasted sesame oil or vegetable oil
  • ¼ cup chopped green onion
  • 1 tbsp toasted white sesame seeds
  • 1 lime, cut into wedges

Instructions

  1. Preheat air fryer to 400°F (or oven to 425°F).
  2. Line air fryer pan or baking rack with parchment paper.
  3. Cut cauliflower into small florets.
  4. In a large bowl, mix flour, cornstarch, baking powder, salt, garlic powder, and pepper. Add cold seltzer water and stir until thick like pancake batter.
  5. Coat cauliflower florets in batter and arrange in a single layer in air fryer basket or on baking sheet. Avoid overcrowding.
  6. Spray with oil and air fry for 17 minutes, flipping halfway (or bake 20–22 minutes).
  7. In a saucepan, combine maple syrup, soy sauce, brown sugar, garlic, ginger, vinegar, sesame oil, Gochujang, mirin, and cornstarch. Cook until thickened.
  8. Toss crispy cauliflower in sauce until coated evenly.
  9. Garnish with chopped green onion, sesame seeds, and lime wedges before serving.

Notes

Keep seltzer water cold for a light, crispy batter. Reheat leftovers in the air fryer to restore crunch. Adjust Gochujang to control spice level. Great with a soy dipping sauce or yogurt-based dip.
