- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter, chilled and diced
- 1/4 cup ice water
- 6 to 8 apples, peeled, cored, and sliced
- 3/4 cup sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 egg (for egg wash)
Instructions
- Preheat oven to 425°F (220°C) and place the rack in the lower third of the oven.
- In a bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in water until dough forms.
- Divide dough in half, shape into balls, and flatten into discs. Wrap in plastic and refrigerate for at least 4 hours.
- Roll out one disc and fit into a pie pan.
- In a separate bowl, combine sliced apples, sugar, flour, cinnamon, nutmeg, and lemon juice. Toss gently to coat the apples.
- Pour the apple mixture into the crust. Roll out the second disc and place over the filling. Seal and flute edges, then cut slits in the top crust.
- Brush the crust with beaten egg.
- Bake in the preheated oven for 15 minutes. Reduce temperature to 350°F (175°C) and bake for an additional 35-45 minutes until apples are tender and crust is golden.
- Cool before serving.
Notes
To enhance flavor, use a mix of tart and sweet apples. Letting the pie rest after baking helps the juices to set.
