I’m Amelia Hart, a 38-year-old chef based in Portland, Oregon, and my cooking follows the rhythm of the seasons. For me, food is more than nourishment it’s a conversation with the land, a way of listening to what nature is offering right now.I grew up in Vermont, where my parents ran a small roadside café that changed its menu as often as the weather. We cooked with whatever was freshest sun-warmed tomatoes, apples picked at dawn, or wild herbs my dad gathered from the woods behind our house. Those early days taught me that the soul of a meal doesn’t come from a recipe; it comes from care, intuition, and respect for the ingredients.I never went to culinary school my training began beside my mother, who hummed over simmering pots while snow fell outside. Since then, I’ve cooked in small-town diners, coastal kitchens, and farmers’ market stalls across the country, always carrying one simple belief with me: food should taste like where you are.Today, I host a cozy supper club from my kitchen in Portland, where the menu shifts with the seasons maybe roasted sweet corn chowder with smoked paprika in late summer, or braised short ribs with parsnip purée when the air turns crisp. I let the market and the weather guide my hands, trusting that nature always knows best.My hope is to inspire home cooks to find that same joy and connection in their own kitchens. You don’t need fancy equipment or a chef’s jacket just curiosity, patience, and the courage to taste as you go. Some of my best dishes have come from happy accidents: a little too much salt, an unplanned handful of herbs, or a last-minute change that turned out just right.I’ve had my share of flops scorched bread, underdone pies, and soups that never quite found their balance but I’ve learned that every mistake has its own lesson. Cooking, after all, is a practice in paying attention.Following the seasons keeps me grounded. It reminds me that food isn’t meant to be rushed; it’s meant to be experienced, savored, and shared. When you fill your kitchen with what’s fresh, local, and real, you’re not just making dinner you’re telling a story about where you are, one delicious plate at a time.
