Description

Celebrate the flavors of fall with this Autumn Harvest Honeycrisp Apple and Feta Salad. Sweet, crisp apples meet salty feta, crunchy nuts, and tangy dressing for a refreshing, colorful dish perfect for the season.

Ingredients

Scale
  • 6 cups mixed greens (spinach, arugula, or spring mix)
  • 1 large Honeycrisp apple, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/3 cup toasted pecans (or walnuts)
  • 1/4 cup dried cranberries
  • 1/4 cup pomegranate seeds (optional)
  • 1/4 red onion, thinly sliced
  • 2 tablespoons pumpkin seeds (optional)
  • 1 tablespoon fresh thyme leaves (optional)
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine mixed greens, sliced Honeycrisp apple, red onion, and dried cranberries.
  2. Sprinkle crumbled feta, toasted pecans, and pumpkin seeds (if using) over the top.
  3. In a small bowl or jar, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until emulsified.
  4. Drizzle dressing over the salad and toss gently until evenly coated.
  5. Top with pomegranate seeds and thyme leaves for garnish, if desired.
  6. Serve immediately as a side dish or light main meal.

Notes

Use fresh ingredients for the best flavor. Keep dressing separate until serving to prevent sogginess. Add grilled chicken, chickpeas, or roasted sweet potatoes for a heartier version. Store leftovers separately and enjoy within one day.
