Description

Baked Feta Eggs are a delightful twist on your morning routine. This cozy breakfast combines creamy feta, ripe tomatoes, and fresh spinach baked together with eggs for a colorful, flavorful brunch dish.

Ingredients

Scale
  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves minced garlic
  • 8 ounces feta cheese
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes
  • 1 cup chopped baby spinach
  • 4 large eggs
  • Optional: chopped fresh basil or chives for topping

Instructions

  1. Preheat oven to 400°F (200°C).
  2. For individual servings: divide tomatoes, bell pepper, onion, garlic, and feta between 4 oven-safe dishes. Drizzle each with 1 tbsp olive oil. For one large dish: combine all veggies, place feta in center, and drizzle with olive oil.
  3. In a small bowl, mix oregano, salt, thyme, black pepper, and red pepper flakes. Sprinkle evenly over the feta and vegetables.
  4. Bake for 25 minutes until tomatoes burst and feta softens.
  5. Stir to blend flavors, then mix in chopped spinach.
  6. Create a small well in the center (or four wells) and crack an egg into each.
  7. Return to oven and bake 10 minutes or until eggs are set to your liking.
  8. Top with fresh basil or chives and serve warm with crusty bread, toast, or pita.

Notes

Use good-quality feta for the creamiest texture. Adjust veggies as desired — zucchini, mushrooms, or artichokes also work great. Add red pepper flakes or jalapeño for spice, or cooked grains for a heartier dish.
