Description

A delicious and easy baked lemon butter chicken recipe perfect for busy families.


Ingredients

Scale
  • 10 dark meat chicken pieces (drumsticks and thighs, trimmed of any excess fat)
  • 2 tsp kosher salt
  • 1 tbsp smoked paprika
  • 1 tbsp Montreal chicken seasoning blend or any chicken seasoning of choice
  • 2 tbsp butter
  • 1/2 cup red onion (minced)
  • 1/2 cup flat-leaf parsley (chopped)
  • 1 tbsp garlic (minced)
  • 1/2 tsp red pepper flakes
  • 1 cup chicken stock
  • 1 tbsp fresh lemon juice
  • 1 cup freshly grated Parmesan cheese
  • 1/3 cup heavy whipping cream

Instructions

  1. Melt butter over medium heat in a skillet.
  2. Add onions and sauté until fragrant, about 2 minutes.
  3. Mix in chopped parsley and garlic, then add lemon juice and red pepper flakes.
  4. Add chicken stock followed by Parmesan cheese, and then heavy cream.
  5. Bring sauce to a simmer for a minute, then turn off the heat and let cool slightly.
  6. Season chicken with salt, smoked paprika, and chicken seasoning, then pour sauce over chicken in a baking dish.
  7. Bake UNCOVERED on 375°F for 105 minutes, flipping halfway through.
  8. Broil on the skin side until golden brown.
  9. Baste in sauce to finish and enjoy!

Notes

Pair with fresh vegetables, salad, rice, or crusty bread to soak up the sauce. Leftovers can be stored in an airtight container for up to three days.
