- 2 chicken breasts
- 1 cup barbecue sauce
- 2 medium sweet potatoes
- 1 avocado, sliced
- 1 cup corn (canned or frozen)
- Salt and pepper to taste
- Olive oil
- Fresh cilantro (optional)
- Lime wedges (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potatoes, then toss them in olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, or until tender.
- While the sweet potatoes are roasting, season the chicken breasts with salt and pepper. Grill or pan-sear over medium-high heat for about 6-7 minutes per side, or until cooked through.
- Brush the cooked chicken with barbecue sauce and let it simmer for a couple of minutes.
- To assemble the bowl, place a scoop of roasted sweet potatoes at the bottom, sliced BBQ chicken on top, and finish with avocado, corn, and any other desired toppings.
- Serve warm and enjoy!
