Ingredients

- 500g beef (patinho or acém), cut into cubes
- 4 large potatoes, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, chopped
- 1 liter beef stock
- 300ml cream
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a pot, heat some oil and sauté the onion and garlic until softened.
- Add the beef and cook until browned.
- Stir in the carrot and potatoes, mixing well.
- Add the beef stock and simmer for about 40 minutes, or until the beef is tender.
- Mix in the cream and adjust salt and pepper as needed.
- Serve hot, garnished with chopped parsley.
Notes
This soup can be made a day ahead for deeper flavors. Store leftovers in airtight containers for up to 3 days or freeze for up to 2 months.
