Ingredients

- 2 cups elbow macaroni
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 cup celery, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup green onions, sliced
- 3 hard-boiled eggs, chopped
- Salt and pepper to taste
Instructions
- Cook the elbow macaroni according to package instructions. Drain and let cool.
- In a large bowl, combine mayonnaise, Dijon mustard, and apple cider vinegar to make the dressing.
- Add the cooled macaroni, celery, red bell pepper, green onions, and chopped eggs to the bowl.
- Mix everything together until well combined.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least one hour before serving.
Notes
Add a pinch of salt while cooking the pasta for extra flavor. Adjust the mayonnaise for creaminess and add sugar for sweetness if desired.
