- 1 can black beans, drained and rinsed
- 1 cup rice
- 2 sausages, sliced (e.g., smoked sausage or chorizo)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
- Chopped cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Sauté the onions and garlic until softened.
- Add the sliced sausage and cook until browned.
- Stir in the cumin, smoked paprika, salt, and pepper, cooking for an additional minute.
- Add the rice and stir for a minute to toast.
- Pour in the broth and black beans, bring to a boil.
- Reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked.
- Fluff the rice with a fork, garnish with chopped cilantro, and serve warm.
