Description

A comforting one-pot meal of creamy black beans, fluffy rice, and smoky sausage that brings warmth and joy to the table.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup rice
  • 2 sausages, sliced (e.g., smoked sausage or chorizo)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Sauté the onions and garlic until softened.
  2. Add the sliced sausage and cook until browned.
  3. Stir in the cumin, smoked paprika, salt, and pepper, cooking for an additional minute.
  4. Add the rice and stir for a minute to toast.
  5. Pour in the broth and black beans, bring to a boil.
  6. Reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked.
  7. Fluff the rice with a fork, garnish with chopped cilantro, and serve warm.

Notes

A squeeze of lime at the end brings brightness to the dish. Leftovers taste even better the next day.
