Quick and comforting BBQ chicken quesadillas with a sweet and smoky flavor profile, perfect for family meals.


Ingredients

  • Cooking oil of choice
  • 1 pound boneless, skinless chicken thighs (or chicken breasts)
  • Kosher salt
  • Pepper
  • BBQ seasoning blend
  • 3 tablespoons BBQ sauce (plus more to drizzle in quesadillas)
  • 2 tablespoons hot honey (plus more to drizzle in quesadillas)
  • 4 large burrito size flour tortillas
  • 3 cups shredded cheese of choice (e.g., cheddar and Monterey Jack mix)
  • 1/2 cup chopped cilantro (optional)
  • Optional toppings: sour cream, jalapenos

Instructions

  1. Preheat the griddle to medium.
  2. Add a splash of cooking oil to prevent the chicken from sticking.
  3. Add chicken, kosher salt, pepper, and BBQ seasoning, spreading evenly.
  4. Cook for 6 minutes, mixing occasionally.
  5. Flip the chicken to brown on all sides.
  6. Add BBQ sauce and hot honey, stirring to coat the chicken.
  7. Cook for 2 more minutes until glossy and sticky.
  8. Remove chicken and lower heat.
  9. Add more oil and lay tortillas flat on the griddle.
  10. Sprinkle half the cheese on one side of each tortilla.
  11. Add chicken, drizzle with more BBQ sauce and hot honey, cilantro if using, and remaining cheese.
  12. Fold the tortillas and cook for 1-2 minutes per side.
  13. Remove when cheese is melted and tortillas are crispy.
  14. Let rest before cutting and serve with desired toppings.

Notes

Let the kids help sprinkle cheese or drizzle honey for engagement. Store leftovers in an airtight container for up to 3 days.
