Description

A comforting and simple recipe for Blackstone Steak Fajitas, packed with tender beef and charred vegetables, perfect for family dinners.


Ingredients

  • 1 lb flank steak
  • 2 tablespoons olive oil
  • 1 bell pepper (any color), sliced
  • 1 onion, sliced
  • 2 teaspoons fajita seasoning
  • Salt and pepper to taste
  • Tortillas
  • Optional toppings: sour cream, guacamole, salsa, cheese

Instructions

  1. Preheat your Blackstone grill over medium-high heat.
  2. In a bowl, combine olive oil, fajita seasoning, salt, and pepper. Whisk to mix.
  3. Add flank steak, bell pepper, and onion to the bowl and coat them in the marinade. Let sit for at least 10 minutes.
  4. Place the steak and vegetables on the grill, spread them out to avoid overcrowding.
  5. Cook the steak for 5-7 minutes on each side or until desired doneness.
  6. Meanwhile, grill the peppers and onions until tender, moving around to char different sides.
  7. Remove steak from grill, let it rest for a few minutes, then slice against the grain.
  8. Serve steak and veggies in warm tortillas with your choice of toppings.

Notes

For extra flavor, sprinkle a little more fajita seasoning on the vegetables when they finish cooking. Store leftovers in an airtight container in the fridge for up to 3 days.
