- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups fresh blueberries
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, combine the melted butter, milk, eggs, and vanilla extract. Slowly pour this wet mixture into the dry ingredients and stir gently until just combined.
- Gently fold in the blueberries, being careful not to smash them.
- In a small bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Line a muffin tin with paper liners or grease it. Spoon about one tablespoon of muffin batter into each liner, followed by about one teaspoon of cream cheese filling, and top it off with another tablespoon of muffin batter.
- Swirl a toothpick gently through the batter and cream cheese for a lovely marbled effect.
- Bake for 20-25 minutes until the tops are golden and a toothpick comes out clean.
- Once baked, let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
Notes
Store muffins in an airtight container in the fridge for up to a week, or freeze them for longer storage.
