Description

Broccoli Cheddar Egg Bake with Turkey Bacon is a healthy breakfast casserole packed with protein, veggies, and flavor. Perfect for breakfast meal prep and brunch.

Ingredients

Scale
  • 8 large eggs
  • 1 cup milk
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 2 cups broccoli florets (fresh or thawed if frozen)
  • 6 slices turkey bacon
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Butter or oil for greasing dish

Instructions

  1. Preheat oven to 350°F (175°C) and grease a casserole dish.
  2. Cook turkey bacon until crisp, then chop into pieces.
  3. Steam or blanch broccoli until just tender.
  4. In a large bowl, whisk eggs, milk, garlic powder, salt, and pepper.
  5. Fold in cheddar cheese, broccoli, and turkey bacon.
  6. Pour mixture into prepared dish and bake for 30–35 minutes, until eggs are set and top is golden.
  7. Let rest for 5 minutes before slicing and serving.

Notes

Do not overcook broccoli before baking to avoid mushiness. You can substitute turkey bacon with mushrooms or bell peppers for a vegetarian option. Store leftovers in the fridge for up to 4 days or freeze for longer storage.
