- ½ cup unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp baking soda

- 2 tsp ground cinnamon
- 1 tsp ground ginger
- ½ tsp ground cardamom
- ¼ tsp ground cloves
- ½ tsp nutmeg
- ¾ cup whole milk (or buttermilk)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
- Cream butter and brown sugar in a bowl until light and fluffy.
- Beat in eggs one at a time, then add vanilla extract.
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, cardamom, cloves, and nutmeg.
- Add dry ingredients to the wet mixture, alternating with milk. Mix gently until combined.
- Pour batter into the prepared pan and smooth the top.
- Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
- Cool on a wire rack before slicing and serving.
Notes
Use room temperature ingredients for best texture. Swap in buttermilk for extra moisture or add chopped nuts for crunch.
