Description

Ingredients

  • 1 cup brown sugar (lightly packed)
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground cardamom
  • ¼ tsp ground cloves
  • ½ tsp nutmeg
  • ¾ cup whole milk (or buttermilk)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
  2. Cream butter and brown sugar in a bowl until light and fluffy.
  3. Beat in eggs one at a time, then add vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, cardamom, cloves, and nutmeg.
  5. Add dry ingredients to the wet mixture, alternating with milk. Mix gently until combined.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool on a wire rack before slicing and serving.

Notes

Use room temperature ingredients for best texture. Swap in buttermilk for extra moisture or add chopped nuts for crunch.
