- 4 1/2 lbs chicken
- 4 cups buttermilk
- 3 large eggs
- 1 1/2 tbsp mustard (optional)
- 1 tbsp cayenne pepper
- 1 tbsp hot sauce (optional)
- 1/3 cup reserved flour seasoning
- 3 1/2 cups all-purpose flour
- 1 cup cornstarch
- 1 1/2 tbsp onion powder
- 1 1/2 tbsp garlic powder
- 1 tbsp paprika
- 2 tsp coarse black pepper
- 1 tbsp + 1 tsp coarse salt
- 1 tbsp MSG (optional)
- Vegetable oil (for frying)
Instructions
- In a large bowl, combine the buttermilk, eggs, mustard, cayenne pepper, and hot sauce. Whisk to blend. Add the chicken and marinate for at least 1 hour or overnight in the refrigerator for best results.
- In another bowl, mix together the flour, cornstarch, onion powder, garlic powder, paprika, black pepper, salt, and MSG to create the flour seasoning.
- Remove the chicken from the marinade and let excess buttermilk drip off. Dredge the chicken pieces in the flour seasoning until fully coated.
- Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C).
- Fry the chicken in batches for 12-13 minutes or until golden brown and cooked through.
- Drain on paper towels and serve hot.
Notes
Marinate overnight for a deeper flavor. Monitor oil temperature while frying for best results.
