Description

A comforting dish featuring crispy fried chicken marinated in buttermilk, perfect for family gatherings.


Ingredients

  • 4 1/2 lbs chicken
  • 4 cups buttermilk
  • 3 large eggs
  • 1 1/2 tbsp mustard (optional)
  • 1 tbsp cayenne pepper
  • 1 tbsp hot sauce (optional)
  • 1/3 cup reserved flour seasoning
  • 3 1/2 cups all-purpose flour
  • 1 cup cornstarch
  • 1 1/2 tbsp onion powder
  • 1 1/2 tbsp garlic powder
  • 1 tbsp paprika
  • 2 tsp coarse black pepper
  • 1 tbsp + 1 tsp coarse salt
  • 1 tbsp MSG (optional)
  • Vegetable oil (for frying)

Instructions

  1. In a large bowl, combine the buttermilk, eggs, mustard, cayenne pepper, and hot sauce. Whisk to blend. Add the chicken and marinate for at least 1 hour or overnight in the refrigerator for best results.
  2. In another bowl, mix together the flour, cornstarch, onion powder, garlic powder, paprika, black pepper, salt, and MSG to create the flour seasoning.
  3. Remove the chicken from the marinade and let excess buttermilk drip off. Dredge the chicken pieces in the flour seasoning until fully coated.
  4. Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C).
  5. Fry the chicken in batches for 12-13 minutes or until golden brown and cooked through.
  6. Drain on paper towels and serve hot.

Notes

Marinate overnight for a deeper flavor. Monitor oil temperature while frying for best results.
