- 1 garlic head
- Sprinkle of salt
- 30 grams olive oil
- 50 grams butter
- 1 tablespoon fresh parsley (chopped)
- 90 grams warm milk
- 7 grams active dry yeast
- 25 grams honey
- 200 grams all-purpose flour
- 50 grams bread flour
- 20 grams milk powder (optional)
- 25 grams butter (softened)
- 2 egg yolks
- 1 1/2 teaspoon salt
- 1 tablespoon sugar
- 200 grams mozzarella cheese
- Garlic butter (prepared earlier)
- 1 egg (for egg wash)
Instructions
- Roast Garlic: Cut the top off a garlic head, drizzle with olive oil, sprinkle with salt, cover with foil, and roast at 160°C (320°F) for 2 hours until soft.
- Prepare Garlic Butter: Mix roasted garlic with softened butter, parsley, and 2 tablespoons garlic oil. Set aside.
- Make Yeast Mixture: Combine warm milk, yeast, and honey in a bowl. Let proof 10 minutes until frothy.
- Mix Dough: Combine flours, sugar, milk powder, butter, salt, and yeast mixture in a bowl.
- Knead Dough: Knead 15–20 minutes with a dough hook until smooth and soft.
- Proof Dough: Cover and let rise 1 hour 30 minutes or until doubled in size.
- Roll Out Dough: Roll dough to 1/4 cm thickness and spread garlic butter evenly.
- Add Cheese: Sprinkle mozzarella over dough and roll into a log.
- Cut Dough: Slice into 6 equal rolls with a knife or dental floss.
- Second Proof: Place rolls on a tray, cover, and let rise 30 minutes.
- Bake: Preheat oven to 175°C (350°F), brush with egg wash, and bake 20–25 minutes until golden.
- Decorate: Brush with remaining garlic butter and sprinkle parsley before serving.
Notes
Serve warm for the best texture. These rolls pair perfectly with soups, pasta, or salads. Store in an airtight container for 2–3 days or refrigerate for up to a week. You can also freeze them for up to 2 months and reheat before serving.
