- 1 lb ground beef or turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 4 cups chicken or vegetable broth
- 1 small head of cabbage, chopped
- 1 cup cooked rice
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onions and garlic, and sauté until softened.
- Add the ground beef or turkey and cook until browned, breaking it up with a spoon.
- Stir in the diced tomatoes, broth, chopped cabbage, and cooked rice.
- Season with paprika, salt, and pepper. Taste as you go.
- Bring to a boil, then reduce heat and simmer for about 30 minutes, until the cabbage is tender.
- Serve hot and enjoy your cozy soup!
Notes
Feel free to swap ground turkey for beef, use leftover rice, or add a splash of vinegar for brightness.
