Description

A flavorful and nutritious meal featuring seasoned chicken and roasted sweet potatoes, perfect for busy families.


Ingredients

  • 2 large chicken breasts
  • 2 tablespoons Cajun seasoning
  • 2 medium sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 bell pepper, diced
  • 1 red onion, diced
  • 1 cup broccoli florets
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, and pepper, then spread them out on a baking sheet.
  3. Bake the sweet potatoes for about 20-25 minutes until tender and slightly caramelized.
  4. Rub the chicken breasts with 1 tablespoon of olive oil and coat evenly with Cajun seasoning.
  5. Heat a skillet over medium-high heat and add the seasoned chicken. Cook for about 6-7 minutes on each side until the internal temperature reaches 165°F (75°C).
  6. Remove the chicken from the skillet and let it rest.
  7. Add the diced onion, bell pepper, and broccoli to the same skillet. Sauté for about 5-7 minutes until the vegetables are tender yet crisp.
  8. Slice the chicken into strips.
  9. Assemble in individual bowls with roasted sweet potatoes, sautéed veggies, and sliced chicken.
  10. Garnish with fresh cilantro and serve with lime wedges.

Notes

You can prep the sweet potatoes ahead of time. Leftovers can be stored in an airtight container in the fridge for up to three days.
