- 8 oz penne pasta
- 1 lb Cajun sausage, sliced
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 tsp Cajun seasoning
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or mozzarella)
- Salt and pepper to taste
- 2 tbsp olive oil
- Chopped parsley for garnish
Instructions
- Cook the penne pasta according to package instructions; drain and set aside.
- In a large pot, heat olive oil over medium heat. Add the sliced sausage and cook until browned, about 5 minutes.
- Add the chopped onion, bell pepper, and garlic, and sauté until softened, about 3-4 minutes.
- Stir in the Cajun seasoning and cook for another minute.
- Pour in the heavy cream and bring to a simmer.
- Add the cooked pasta to the pot and stir well to combine.
- Stir in the shredded cheese until melted and creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley.
