Description

Ingredients

  • 2 pounds of chicken (breast or thighs)
  • 1 can of diced tomatoes (16 oz)
  • 1 can of beans (15 oz, any type)
  • 1 packet of taco seasoning
  • 1 cup of corn (frozen or canned)

Instructions

  1. Place the chicken at the bottom of the crockpot.
  2. Pour the diced tomatoes over the chicken.
  3. Add the drained beans and corn on top.
  4. Sprinkle the taco seasoning over everything.
  5. Cover and cook on low for 360 minutes (6-8 hours) or high for 240 minutes (3-4 hours), until the chicken is cooked through.
  6. Shred the chicken with two forks before serving.
