Ingredients

- 2 pounds of chicken (breast or thighs)
- 1 can of diced tomatoes (16 oz)
- 1 can of beans (15 oz, any type)
- 1 packet of taco seasoning
- 1 cup of corn (frozen or canned)
Instructions
- Place the chicken at the bottom of the crockpot.
- Pour the diced tomatoes over the chicken.
- Add the drained beans and corn on top.
- Sprinkle the taco seasoning over everything.
- Cover and cook on low for 360 minutes (6-8 hours) or high for 240 minutes (3-4 hours), until the chicken is cooked through.
- Shred the chicken with two forks before serving.
Notes
Feel free to swap out the chicken for beef or a vegetarian option like tofu. You can add extra veggies like bell peppers or onions for more nutrition.
