Cheddar and Herb Soda Bread

Description

A quick and easy yeast-free bread with the delightful flavors of cheddar cheese and fresh herbs.


Ingredients

  • 4 cups all-purpose flour (plus extra as needed)
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 tbsp chopped fresh chives
  • 1 tbsp chopped fresh thyme
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh sage
  • 1 cup shredded cheddar cheese
  • 1 ¾ cups buttermilk

Instructions

  1. Preheat the oven to 425°F.
  2. In a mixing bowl, combine the flour, baking soda, and salt. Stir together until well mixed.
  3. Add the chopped fresh herbs and shredded cheese to the flour mixture.
  4. Pour in the buttermilk and stir until everything is combined into a dough.
  5. Turn the dough out onto a lightly floured counter. Knead it lightly just a couple of times to form a smooth ball.
  6. Shape the dough into a ball and pat it out into a 7-inch circle.
  7. Lightly flour a baking sheet and transfer the dough onto it. Dust the top with more flour.
  8. Use a sharp knife to score a cross into the top of the dough, cutting about ½ inch deep.
  9. Bake the bread for 15 minutes, then reduce the heat to 375°F. Continue baking for another 30 to 35 minutes.
  10. Wrap the soda bread in a tea towel to cool after baking.

Notes

Make sure your baking soda is fresh for the best rise. Don’t over-knead the dough to keep the bread light and airy.
