Description

Delicious, crispy bites filled with creamy and cheesy goodness, perfect for snacks or appetizers.


Ingredients

  • 2 lb Russet potatoes (about 4 potatoes)
  • 4 cloves garlic (smashed)
  • 2 tablespoons salt
  • 1/4 cup cream cheese
  • 2 tablespoons butter
  • ¼ tsp black pepper
  • 2 large eggs
  • 3 tablespoons all-purpose flour
  • 1 tsp salt
  • 2 cups breadcrumbs
  • Mozzarella (cut into 1-inch cubes)

Instructions

  1. Peel and chop the potatoes into 1-inch cubes.
  2. Add them to a large pot with the smashed garlic and salt.
  3. Cover the potatoes with cold water and bring to a boil.
  4. Reduce heat and simmer for 15 minutes until tender.
  5. Drain and remove the garlic.
  6. Add the cream cheese, butter, and black pepper.
  7. Mash the potatoes until combined but keep it chunky.
  8. In a shallow dish, whisk eggs, flour, and salt until smooth.
  9. In another shallow dish, add breadcrumbs.
  10. Take about 1/2 cup of the mashed potato, press a cube of cheese into the center, and shape into a ball.
  11. Dip in the egg wash and coat with breadcrumbs.
  12. Repeat until you run out of mixture.
  13. Heat 1 inch of oil to 350°F and fry croquettes for 2-3 minutes on each side until golden brown.
  14. Serve with gravy or ketchup.

Notes

Don’t overmix the potato mixture; keep it chunky for better texture. Experiment with different types of cheese for varied flavors.
