Description
This cozy cheeseburger casserole combines savory ground beef, pasta, and creamy tomato-cheese sauce for the ultimate lazy dinner.
Ingredients
1 lb ground beef (85% lean)
1/2 onion, diced
2 cloves garlic, minced
2 cups cooked elbow macaroni
1/2 cup diced tomatoes
2 tbsp tomato paste
1/4 cup cream cheese (or sour cream)
1 cup shredded cheddar cheese
Salt & pepper to taste
Optional: pickles, mustard drizzle
Instructions
1. Preheat oven to 375°F (190°C).
2. In a skillet, sauté ground beef with onion and garlic until browned.
3. Stir in diced tomatoes, tomato paste, and cream cheese until creamy.
4. Fold in the cooked macaroni and season with salt and pepper.
5. Transfer mixture to a greased baking dish.
6. Top with shredded cheddar cheese.
7. Bake for 15–20 minutes or until cheese is melted and bubbly.
8. Let rest for 5 minutes before serving. Top with pickles or drizzle of mustard if desired.
Notes
Make-ahead friendly: Assemble and refrigerate up to 2 days before baking.
Freezes well. Reheat in oven at 350°F for 15–20 minutes.
For a low-carb version, swap macaroni with cauliflower pasta or roasted veggies.
