A comforting and creamy gluten-free casserole featuring tender chicken, fluffy rice, and gooey cheese — perfect for any family dinner.


Ingredients

  • 2 cups cooked white rice
  • 2 cups cooked chicken breast, shredded or cubed
  • 1 1/2 cups shredded cheddar cheese (or dairy-free alternative)
  • 1 cup milk (or unsweetened almond milk)
  • 1/2 cup gluten-free chicken broth
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional: 1 cup broccoli florets, lightly blanched
  • Optional: garlic infused oil or herbs (for low FODMAP version)

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat olive oil and sauté the chicken with light seasoning until warmed through.
  3. In a bowl, mix the milk, chicken broth, and 1 cup of shredded cheese to create the cheese sauce.
  4. In a large mixing bowl, combine cooked rice, sautéed chicken, optional broccoli, and the cheese sauce. Stir well.
  5. Transfer the mixture into a greased baking dish and spread evenly.
  6. Top with the remaining 1/2 cup of shredded cheese.
  7. Bake for 25–30 minutes or until golden and bubbly on top.
  8. Let cool slightly before serving.

Notes

To make it dairy free, use vegan cheese and almond milk. For extra flavor, try a Mexican cheese blend or add jalapeños for a pollo con queso twist.
