- 2 cups cooked white rice
- 2 cups cooked chicken breast, shredded or cubed
- 1 1/2 cups shredded cheddar cheese (or dairy-free alternative)
- 1 cup milk (or unsweetened almond milk)
- 1/2 cup gluten-free chicken broth
- 1 tbsp olive oil
- Salt and pepper to taste
- Optional: 1 cup broccoli florets, lightly blanched
- Optional: garlic infused oil or herbs (for low FODMAP version)
Instructions
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil and sauté the chicken with light seasoning until warmed through.
- In a bowl, mix the milk, chicken broth, and 1 cup of shredded cheese to create the cheese sauce.
- In a large mixing bowl, combine cooked rice, sautéed chicken, optional broccoli, and the cheese sauce. Stir well.
- Transfer the mixture into a greased baking dish and spread evenly.
- Top with the remaining 1/2 cup of shredded cheese.
- Bake for 25–30 minutes or until golden and bubbly on top.
- Let cool slightly before serving.
Notes
To make it dairy free, use vegan cheese and almond milk. For extra flavor, try a Mexican cheese blend or add jalapeños for a pollo con queso twist.
