Description

This comforting casserole combines ground beef, rice, and cheese into a delicious weeknight dinner.


Ingredients

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1/2 cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish.
  3. Cook ground beef and diced onion in a skillet over medium heat until browned; drain excess fat.
  4. Add minced garlic and cook for 30 seconds until fragrant.
  5. Whisk together cream of mushroom soup, milk or broth, paprika, salt, and pepper in a separate bowl.
  6. Combine cooked rice, beef mixture, half the shredded cheese, and the sauce in the prepared baking dish.
  7. Spread the mixture evenly and sprinkle the remaining cheese on top.
  8. Cover with foil and bake for 20 minutes.
  9. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
  10. Broil for an optional crispy cheese topping for 2 minutes.
  11. Garnish with chopped parsley if desired and serve hot.

Notes

Let the casserole rest for 5 minutes before serving for easier portioning.
