- 2 cups zucchini, chopped
- 1 cup carrots, sliced
- 1 cup broccoli florets
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder

- 1 cup shredded cheese (cheddar or mozzarella)
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix together the vegetables, olive oil, garlic powder, onion powder, salt, and pepper.
- Spread the vegetable mixture on a baking sheet in a single layer.
- Roast in the oven for 20-25 minutes, until the vegetables are tender and slightly golden.

- Return to the oven for 5-7 minutes, until the cheese is melted and bubbly.
