Description

Ingredients

  • 1.5 lbs russet or Yukon gold potatoes, diced
  • 12 oz smoked sausage (kielbasa or andouille), sliced
  • 1 packet ranch seasoning mix
  • 2 tablespoons olive oil
  • 1.5 cups shredded cheddar cheese
  • Optional: 1/4 cup sour cream or cream cheese for extra creaminess
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and grease a 9×13-inch casserole dish.
  2. In a large bowl, toss diced potatoes with olive oil, ranch seasoning, salt, and pepper.
  3. Spread seasoned potatoes in the prepared dish.
  4. Top with sliced smoked sausage evenly over the potatoes.
  5. Sprinkle shredded cheese on top. If using sour cream or cream cheese, mix into the cheese before topping.
  6. Cover with foil and bake for 30 minutes.
  7. Uncover and bake for another 10–15 minutes, until cheese is golden and potatoes are fork tender.
  8. Garnish with chopped parsley and serve warm.

Notes

For a crispier finish, broil the casserole for the last 2 minutes. Store leftovers in the fridge for up to 3 days or freeze for up to 1 month.
