- 1.5 lbs russet or Yukon gold potatoes, diced
- 12 oz smoked sausage (kielbasa or andouille), sliced
- 1 packet ranch seasoning mix
- 2 tablespoons olive oil
- 1.5 cups shredded cheddar cheese
- Optional: 1/4 cup sour cream or cream cheese for extra creaminess
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Preheat oven to 400°F (200°C) and grease a 9×13-inch casserole dish.
- In a large bowl, toss diced potatoes with olive oil, ranch seasoning, salt, and pepper.
- Spread seasoned potatoes in the prepared dish.
- Top with sliced smoked sausage evenly over the potatoes.
- Sprinkle shredded cheese on top. If using sour cream or cream cheese, mix into the cheese before topping.
- Cover with foil and bake for 30 minutes.
- Uncover and bake for another 10–15 minutes, until cheese is golden and potatoes are fork tender.
- Garnish with chopped parsley and serve warm.
Notes
For a crispier finish, broil the casserole for the last 2 minutes. Store leftovers in the fridge for up to 3 days or freeze for up to 1 month.
