Cheesy sausage breakfast casserole with hash browns and eggs. A comforting easy egg bake recipe perfect for family mornings, holidays, or make-ahead meal prep.


Ingredients

  • 1 lb ground pork sausage (or turkey/veggie sausage)
  • 3 cups frozen hash browns (thawed)
  • 8 large eggs
  • 1 1/2 cups milk
  • 2 cups shredded cheddar cheese (or mozzarella/pepper jack)
  • 1/2 cup chopped onion or bell pepper (optional)
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Butter or oil for greasing dish

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook sausage in a skillet until browned and drain excess grease.
  3. Layer thawed hash browns evenly in the baking dish.
  4. Top with cooked sausage and 1 1/2 cups of shredded cheese.
  5. In a bowl, whisk eggs, milk, garlic powder, salt, and pepper until smooth.
  6. Pour egg mixture evenly over the casserole layers.
  7. Sprinkle remaining cheese on top.
  8. Bake 40–45 minutes until center is set and top is golden.
  9. Let rest 5 minutes before slicing and serving.

Notes

For a make-ahead version, assemble the casserole the night before, refrigerate, and bake in the morning. This recipe also freezes well once baked and cooled – cut into portions and reheat when needed.
