Description

Cheesy Taco Pasta is an easy one-pot weeknight dinner that combines the bold flavors of taco-seasoned beef with creamy, cheesy pasta for a comforting and quick family meal.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups uncooked pasta shells
  • 2 ½ cups chicken broth
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream (or Greek yogurt)
  • Salt and pepper to taste
  • Optional toppings: chopped cilantro, diced tomatoes, jalapeños, crushed tortilla chips

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Stir in taco seasoning and diced tomatoes (with juice).
  3. Add uncooked pasta and chicken broth directly to the skillet. Stir to combine.
  4. Bring to a boil, then reduce heat and simmer uncovered for 12-15 minutes, or until pasta is tender.
  5. Once pasta is cooked, stir in shredded cheddar cheese until melted and smooth.
  6. Add sour cream and mix until creamy and well combined.
  7. Serve immediately with desired toppings such as cilantro, tomatoes, jalapeños, or tortilla chips.

Notes

To avoid mushy pasta, keep an eye on it while simmering and stir occasionally. For a lighter version, substitute ground turkey or chicken and use Greek yogurt in place of sour cream.
