Cheesy Taco Pasta is an easy one-pot weeknight dinner that combines the bold flavors of taco-seasoned beef with creamy, cheesy pasta for a comforting and quick family meal.

- 1 pound ground beef
- 1 packet taco seasoning
- 1 can (14.5 oz) diced tomatoes
- 2 cups uncooked pasta shells
- 2 ½ cups chicken broth
- 1 cup shredded cheddar cheese
- ½ cup sour cream (or Greek yogurt)
- Salt and pepper to taste
- Optional toppings: chopped cilantro, diced tomatoes, jalapeños, crushed tortilla chips
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Stir in taco seasoning and diced tomatoes (with juice).
- Add uncooked pasta and chicken broth directly to the skillet. Stir to combine.
- Bring to a boil, then reduce heat and simmer uncovered for 12-15 minutes, or until pasta is tender.
- Once pasta is cooked, stir in shredded cheddar cheese until melted and smooth.
- Add sour cream and mix until creamy and well combined.
- Serve immediately with desired toppings such as cilantro, tomatoes, jalapeños, or tortilla chips.
Notes
To avoid mushy pasta, keep an eye on it while simmering and stir occasionally. For a lighter version, substitute ground turkey or chicken and use Greek yogurt in place of sour cream.
