Description

Cheesy Taco Pasta is the ultimate comfort dish that combines spiced ground beef, tender pasta, and gooey cheese into a one-skillet meal that feels like taco night and pasta night had the perfect dinner baby. It’s warm, filling, and ridiculously easy to make.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2 cups uncooked pasta shells (or elbow, penne, rotini)
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 ½ cups beef or chicken broth
  • 1 ½ cups shredded cheddar cheese (or Mexican blend)
  • Salt and pepper to taste
  • Optional toppings: sour cream, avocado, jalapeños, tortilla chips, cilantro, green onions

Instructions

  1. Cook pasta in salted water until just al dente. Drain and set aside.
  2. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  3. Stir in taco seasoning, diced tomatoes, and broth. Simmer for a few minutes.
  4. Add cooked pasta to the skillet and stir to combine.
  5. Add half of the shredded cheese and stir until melted and creamy.
  6. Top with remaining cheese and serve as is, or transfer to a baking dish and bake at 375°F for 10 minutes until bubbly.
  7. Garnish with your favorite toppings before serving.

Notes

Do not overcook the pasta. Add cheese in stages for a smoother sauce. This dish freezes well and reheats with a splash of broth or milk to restore creaminess.
