Ingredients

- 1 pound ground beef
- 1 packet taco seasoning
- 2 cups uncooked pasta shells (or elbow, penne, rotini)
- 1 can (10 oz) diced tomatoes with green chilies
- 2 ½ cups beef or chicken broth
- 1 ½ cups shredded cheddar cheese (or Mexican blend)
- Salt and pepper to taste
- Optional toppings: sour cream, avocado, jalapeños, tortilla chips, cilantro, green onions
Instructions
- Cook pasta in salted water until just al dente. Drain and set aside.
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Stir in taco seasoning, diced tomatoes, and broth. Simmer for a few minutes.
- Add cooked pasta to the skillet and stir to combine.
- Add half of the shredded cheese and stir until melted and creamy.
- Top with remaining cheese and serve as is, or transfer to a baking dish and bake at 375°F for 10 minutes until bubbly.
- Garnish with your favorite toppings before serving.
Notes
Do not overcook the pasta. Add cheese in stages for a smoother sauce. This dish freezes well and reheats with a splash of broth or milk to restore creaminess.
