Easy Cheesy Beef Taco Pasta is a one-pot, family-friendly dinner that brings together the bold spices of taco night and the creamy comfort of cheesy pasta in under 30 minutes.

- 1 pound ground beef
- 1 packet taco seasoning
- 2 cups uncooked pasta shells
- 2 ½ cups beef or chicken broth
- 1 cup salsa or 1 can diced tomatoes
- 1 ½ cups shredded cheddar or Mexican blend cheese
- Salt and pepper to taste
- Optional toppings: sour cream, diced tomatoes, jalapeños, shredded lettuce, guacamole, crushed tortilla chips
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
- Stir in taco seasoning and mix to coat the beef.
- Add broth and salsa (or diced tomatoes), then stir in uncooked pasta shells.
- Bring to a boil, then reduce heat and simmer for 12–15 minutes, stirring occasionally, until the pasta is tender and liquid is mostly absorbed.
- Turn off heat and stir in shredded cheese until melted and creamy.
- Serve hot with your favorite taco toppings for extra flavor and crunch.
Notes
Use freshly shredded cheese for the best melt and creaminess. To make ahead, cook the beef and sauce base and refrigerate or freeze until ready to add pasta. For extra spice, stir in chili flakes or jalapeños.
