- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade mix)
- 2 cups pasta (elbow, rotini, or penne work well)
- 1 can diced tomatoes with green chilies (10 oz)
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ½ cup salsa (optional, for extra kick)
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat your skillet over medium heat. Add ground beef and onion, cooking until browned.
- Stir in garlic and taco seasoning, cooking for another minute until fragrant.
- Add pasta, diced tomatoes, and beef broth. Stir to combine.
- Cover and let simmer until pasta is cooked and liquid is mostly absorbed (about 12–15 minutes).
- Remove from heat and stir in sour cream and shredded cheese until creamy.
- Top with cilantro, extra cheese, or a spoonful of salsa before serving.
Notes
Use freshly grated cheese and don’t overcook the pasta. Add jalapeños, black beans, or corn for variety. Perfect as-is or transformed into a baked taco pasta casserole!
