Description

This Cheesy Taco Pasta combines tender pasta, seasoned ground beef, melted cheese, and taco spices into one creamy, comforting skillet meal. A one-pot family favorite perfect for busy weeknights or cozy weekends!

  • 1 lb ground beef (or ground turkey for lighter option)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade mix)
  • 2 cups pasta (elbow, rotini, or penne work well)
  • 1 can diced tomatoes with green chilies (10 oz)
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ½ cup salsa (optional, for extra kick)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat your skillet over medium heat. Add ground beef and onion, cooking until browned.
  2. Stir in garlic and taco seasoning, cooking for another minute until fragrant.
  3. Add pasta, diced tomatoes, and beef broth. Stir to combine.
  4. Cover and let simmer until pasta is cooked and liquid is mostly absorbed (about 12–15 minutes).
  5. Remove from heat and stir in sour cream and shredded cheese until creamy.
  6. Top with cilantro, extra cheese, or a spoonful of salsa before serving.

Notes

Use freshly grated cheese and don’t overcook the pasta. Add jalapeños, black beans, or corn for variety. Perfect as-is or transformed into a baked taco pasta casserole!
