- 2 pounds chicken breast, diced
- 4 medium sweet potatoes, cubed
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups broccoli florets
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C).
- Combine chicken, sweet potatoes, olive oil, garlic powder, paprika, salt, and pepper in a large bowl. Mix well.
- Spread the mixture on a baking sheet in a single layer.
- Bake for 25-30 minutes or until the chicken is cooked through and sweet potatoes are tender.
- Add broccoli florets to the baking sheet in the last 10 minutes of baking.
- Remove from oven, garnish with parsley, and let cool before portioning.
