Description

A hearty and nutritious dish featuring roasted chicken, sweet potatoes, and broccoli, perfect for meal prep.


Ingredients

  • 2 pounds chicken breast, diced
  • 4 medium sweet potatoes, cubed
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups broccoli florets
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Combine chicken, sweet potatoes, olive oil, garlic powder, paprika, salt, and pepper in a large bowl. Mix well.
  3. Spread the mixture on a baking sheet in a single layer.
  4. Bake for 25-30 minutes or until the chicken is cooked through and sweet potatoes are tender.
  5. Add broccoli florets to the baking sheet in the last 10 minutes of baking.
  6. Remove from oven, garnish with parsley, and let cool before portioning.
