Description

Ingredients

  • 2 chicken breasts, diced
  • 2 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh herbs (optional for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced chicken and season with salt, pepper, thyme, and paprika. Cook until the chicken is browned and fully cooked, about 7-10 minutes.
  3. Remove chicken from the skillet and set aside.
  4. In the same skillet, add the chopped onion and garlic, cooking until softened.
  5. Add the cubed sweet potatoes and a splash of water. Cover and cook for about 15 minutes, stirring occasionally, until the sweet potatoes are tender.
  6. Return the chicken to the skillet and mix everything together. Cook for an additional 2-3 minutes.
  7. Garnish with fresh herbs if desired and serve hot.

Notes

Allowing the chicken to marinate overnight in spices and oil enhances flavor. Use pre-cubed sweet potatoes for quicker prep.
