- 2 chicken breasts, diced
- 2 medium sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh herbs (optional for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced chicken and season with salt, pepper, thyme, and paprika. Cook until the chicken is browned and fully cooked, about 7-10 minutes.
- Remove chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and garlic, cooking until softened.
- Add the cubed sweet potatoes and a splash of water. Cover and cook for about 15 minutes, stirring occasionally, until the sweet potatoes are tender.
- Return the chicken to the skillet and mix everything together. Cook for an additional 2-3 minutes.
- Garnish with fresh herbs if desired and serve hot.
Notes
Allowing the chicken to marinate overnight in spices and oil enhances flavor. Use pre-cubed sweet potatoes for quicker prep.
