A warm, hearty burrito filled with juicy grilled chicken, creamy avocado, melty cheese, and tangy salsa  the perfect comfort meal for busy weeknights or meal prep.


Ingredients

  • 2 cups cooked grilled or shredded chicken
  • 2 ripe avocados, mashed or sliced
  • 4 large flour tortillas (or whole wheat for lighter option)
  • 1 cup shredded Mexican blend or cheddar cheese
  • 1/2 cup salsa or avocado sauce
  • 1/4 cup sour cream (optional)
  • 1/4 cup chopped cilantro (optional)
  • Salt and pepper to taste

Instructions

  1. Warm tortillas slightly to make them flexible.
  2. Layer chicken, avocado, cheese, and salsa (plus sour cream and cilantro if using) onto each tortilla.
  3. Season with salt and pepper to taste.
  4. Fold in the sides, then roll tightly into burritos.
  5. For a crispy finish, grill burritos in a skillet or panini press until golden and the cheese melts.
  6. Serve warm with extra salsa or avocado sauce.

Notes

Don’t overfill tortillas to avoid tearing. Add avocado just before serving if making ahead. Great for quick lunches or family dinners.
