- 1 cup cooked chicken, shredded
- 1 avocado, mashed
- 1 cup shredded cheese (e.g., cheddar or mozzarella)
- Salt and pepper to taste
- Butter for grilling
- Fresh herbs (optional, e.g., cilantro or parsley)
- Smoked paprika (optional)
- Lime (optional)
Instructions
- Preheat a skillet over medium heat.
- In a bowl, combine the shredded chicken and mashed avocado, and season with salt and pepper.
- Spread the chicken and avocado mixture onto one slice of bread.
- Top with shredded cheese and cover with the second slice of bread.
- Butter the outside of the sandwich.
- Place the sandwich in the skillet and grill until golden brown, about 3-4 minutes per side, or until the cheese is melted.
- Remove from skillet, slice, and serve warm.
Notes
Use leftover rotisserie chicken for convenience. Feel free to customize with herbs or spices like smoked paprika for added flavor.
