- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup mixed vegetables (like bell peppers, carrots, and spinach)
- 1/2 cup gluten-free flour (or regular flour)
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for cooking)
Instructions
- In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the mixed vegetables, onion, garlic, cumin, paprika, salt, and pepper to the bowl. Stir well.
- Gradually add the flour until the mixture is thick enough to form into patties.
- Heat olive oil in a large skillet over medium heat.
- Shape the chickpea mixture into small patties and place them in the skillet.
- Cook for about 4-5 minutes on each side, or until golden brown and crispy.
- Remove from the skillet and let cool on a paper towel.
Notes
Store any leftover fritters in an airtight container in the refrigerator for up to 3 days. You can freeze them for longer storage; separate with parchment paper to prevent sticking.
