Description

Ingredients

  • 1 tablespoon soy sauce

  • 1/2 teaspoon baking soda (optional)
  • 1/2 cup chicken stock (or beef stock)
  • 2 tablespoons Shaoxing wine (or dry sherry)
  • 2 tablespoons soy sauce
  • 1 teaspoon dark soy sauce
  • 2 teaspoons brown sugar (or white sugar)
  • 1 tablespoon cornstarch
  • 1 head broccoli (cut into bite-size florets)
  • 1 tablespoon peanut oil (or vegetable oil)
  • 3 garlic cloves (minced)
  • 2 teaspoons ginger (minced)

Instructions

  1. Slice beef thinly against the grain and place in a bowl.
  2. Add soy sauce, peanut oil, and cornstarch to the beef. Mix by hand until coated and let marinate for 10 minutes.
  3. In a medium bowl, mix all sauce ingredients together and set aside.
  4. Heat a skillet over medium-high with 1/4 cup water. Add broccoli and steam for 1 minute until tender. Transfer to a plate and wipe the skillet clean.
  5. Add oil to the pan and heat until hot. Spread steak in a single layer and sear 30 seconds per side until lightly charred but still pink inside.
  6. Add minced garlic and ginger, stirring to release fragrance.
  7. Return broccoli to the skillet, pour in the sauce, and stir until thickened (about 1 minute).
  8. Transfer to a serving plate and serve hot over rice or noodles.

Notes

Slice beef thinly against the grain for tenderness. Marinate before cooking to enhance flavor. Store leftovers in the fridge for up to 3 days and reheat gently. Add red pepper flakes or oyster sauce for variation.
