- 1 cup unsweetened cocoa powder
- 1 cup sugar
- 1/2 cup butter, melted
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1 cup heavy cream
- 4 ounces semi-sweet chocolate, chopped
- 1/2 cup chocolate chips for ganache
- 1/4 cup heavy cream for ganache
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking pan.
- In a bowl, mix together cocoa powder, sugar, melted butter, eggs, and vanilla until smooth.
- Stir in flour and salt until just combined.
- Pour the brownie batter into the prepared pan and bake for 20-25 minutes.
- While brownies are cooling, make the mousse by heating the heavy cream in a pan until just steaming. Remove from heat and add chopped chocolate, stirring until melted and smooth. Let cool slightly.
- Whip the remaining heavy cream until stiff peaks form and gently fold into the chocolate mixture.
- Spread the mousse over the cooled brownies.
- For the ganache, heat the cream until steaming and pour over chocolate chips, letting sit for a few minutes before stirring until smooth.
- Pour ganache over the mousse layer.
- Refrigerate for at least 2 hours before serving. Cut into squares to serve.
Notes
Use high-quality chocolate for best flavor. Allow brownies to cool completely before adding the mousse.
