- 1 cup pumpkin puree (not pumpkin pie filling)
- 2 large eggs
- 1/2 cup vegetable oil or melted butter
- 1 cup granulated sugar (or brown sugar for deeper flavor)
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/8 tsp ground cloves
- Cinnamon Sugar Swirl:
- 1/4 cup granulated sugar
- 1 tbsp ground cinnamon
Instructions
- Preheat oven to 350°F (175°C) and grease a standard loaf pan.
- In a large bowl, whisk together pumpkin puree, eggs, oil (or butter), and sugar until smooth.
- In a separate bowl, mix flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
- Gently fold dry ingredients into the wet mixture until just combined. Do not overmix.
- In a small bowl, combine cinnamon and sugar for the swirl.
- Pour half the batter into the loaf pan, sprinkle evenly with cinnamon sugar, then add remaining batter on top.
- Optional: Sprinkle a pinch of flour over the cinnamon sugar to prevent sinking.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Wrap tightly and store at room temperature for up to 3 days or freeze slices for later. Add-ins like chocolate chips, walnuts, or a cream cheese swirl can enhance the flavor further.
