Description

A comforting dish that combines the warmth of chicken pot pie with the ease of pasta, perfect for family dinners.

Ingredients

Scale
  • 8 oz pasta
  • 2 cups cooked chicken, shredded
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup cream or milk
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon thyme
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the shredded chicken and mixed vegetables, cooking until heated through.
  3. Stir in the cream, chicken broth, garlic powder, onion powder, thyme, salt, and pepper. Bring to a simmer, stirring occasionally until it thickens.
  4. Add the cooked pasta to the skillet and combine well.
  5. If desired, sprinkle shredded cheese on top, cover, and let it melt.
  6. Serve warm and enjoy your comforting dish!

Notes

Make ahead by preparing the chicken and pasta in advance. You can also substitute turkey or use fresh vegetables instead of frozen for a different flavor.
