- 8 oz tri-color rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, finely chopped
- 1 cup mozzarella cheese, cubed
- 1/2 cup parmesan cheese, grated
- 1/4 cup olive oil
- 2 tbsp vinegar
- 1 tsp mustard
- Salt and pepper to taste
Instructions
- Cook the tri-color rotini pasta according to package instructions. Once cooked, drain and let cool.
- In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, mozzarella cheese, and parmesan cheese.
- In a separate bowl, whisk together olive oil, vinegar, mustard, salt, and pepper to make the vinaigrette.
- Pour the vinaigrette over the pasta salad and toss everything to combine.
- Refrigerate for at least 30 minutes before serving. Enjoy your pasta salad at picnics or summer parties!
