Description

A delightful combination of moist banana bread and a sweet crumb topping, perfect for breakfast or as a snack.


Ingredients

  • 34 medium or large bananas
  • 2 Tbsp brown sugar
  • 1 1/2 tsp vanilla extract
  • 3/4 tsp ground cinnamon
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 Tbsp sour cream (or Greek yogurt)
  • 1 tsp cinnamon (for topping)
  • 1 cup flour (for topping)
  • 1 cup brown sugar (for topping)
  • 6 Tbsp cold butter (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease two 8×4-inch pans.
  2. In a small bowl, mash the bananas. Then mix in the brown sugar, vanilla extract, and ground cinnamon.
  3. In a large bowl, cream the softened butter and sugar together until light and fluffy.
  4. Add in the eggs and beat until well mixed.
  5. Sift in the flour, baking soda, and salt into the wet ingredients. Stir until just combined.
  6. Add the sour cream and mix well.
  7. Pour in the mashed bananas and mix until everything is well combined.
  8. For the crumb topping, in a separate bowl, combine flour, brown sugar, cinnamon, and cold butter. Mix until crumbly.
  9. Pour half of the banana mixture into each greased pan and sprinkle the crumb topping over the batter.
  10. Bake in the preheated oven for 50-60 minutes, or until a toothpick comes out clean.
  11. Let cool for a few minutes before transferring to a wire rack.

Notes

Use ripe bananas for the best flavor. Cold butter for the crumb topping is essential for a good crumble texture.
