A delightful combination of moist banana bread and a sweet crumb topping, perfect for breakfast or as a snack.

- 3–4 medium or large bananas
- 2 Tbsp brown sugar
- 1 1/2 tsp vanilla extract
- 3/4 tsp ground cinnamon
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 2 Tbsp sour cream (or Greek yogurt)
- 1 tsp cinnamon (for topping)
- 1 cup flour (for topping)
- 1 cup brown sugar (for topping)
- 6 Tbsp cold butter (for topping)
Instructions
- Preheat the oven to 350°F (175°C). Grease two 8×4-inch pans.
- In a small bowl, mash the bananas. Then mix in the brown sugar, vanilla extract, and ground cinnamon.
- In a large bowl, cream the softened butter and sugar together until light and fluffy.
- Add in the eggs and beat until well mixed.
- Sift in the flour, baking soda, and salt into the wet ingredients. Stir until just combined.
- Add the sour cream and mix well.
- Pour in the mashed bananas and mix until everything is well combined.
- For the crumb topping, in a separate bowl, combine flour, brown sugar, cinnamon, and cold butter. Mix until crumbly.
- Pour half of the banana mixture into each greased pan and sprinkle the crumb topping over the batter.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick comes out clean.
- Let cool for a few minutes before transferring to a wire rack.
Notes
Use ripe bananas for the best flavor. Cold butter for the crumb topping is essential for a good crumble texture.
