Description
Comfort Food in a Bowl: this Mediterranean Power Bowl blends roasted veggies, quinoa or cauliflower rice, and chickpeas or lean protein into a warm, hearty, nourishing meal.
Ingredients
1 cup cooked quinoa or cauliflower rice
1 cup canned chickpeas, drained and rinsed
1 red bell pepper, chopped
1 small zucchini, sliced
¼ cup red onion, thinly sliced
1 tbsp olive oil
½ tsp smoked paprika
Salt and pepper to taste
¼ cup crumbled feta (optional)
6–8 kalamata olives (optional)
Fresh parsley or mint for garnish
Lemon wedges or yogurt dressing for serving
Instructions
1. Preheat oven to 425°F (220°C).
2. Toss chickpeas, bell pepper, zucchini, and onion with olive oil, paprika, salt, and pepper.
3. Spread on a baking sheet and roast for 20 minutes until golden and caramelized.
4. In a bowl, add cooked quinoa or cauliflower rice as a base.
5. Top with roasted vegetables and chickpeas.
6. Add feta, olives, and herbs if using.
7. Drizzle with lemon or yogurt dressing.
8. Serve warm and enjoy.
Notes
Store all components separately to maintain texture.
Swap chickpeas for grilled chicken or beef for a meat option.
Use cauliflower rice for a lower-carb variation.
