Description

This Comforting One-Pot Creamy Vegetable Soup is a cozy, heartwarming meal filled with fresh vegetables and creamy goodness perfect for cold days or simple family dinners.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups potatoes, diced
  • 2 cups mixed vegetables (peas, green beans, corn)
  • 1 cup heavy cream or coconut milk
  • Salt and pepper to taste
  • Fresh herbs (parsley or thyme) for garnish
  • Crusty bread for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté for 5–7 minutes until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Pour in vegetable broth and add potatoes. Bring to a boil, then reduce heat and simmer for 10–15 minutes until potatoes are tender.
  5. Add mixed vegetables and simmer for 5 more minutes.
  6. Stir in heavy cream or coconut milk. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh herbs and a side of crusty bread.

Notes

For a thicker texture, blend part of the soup before adding the cream. Use coconut milk for a dairy-free or vegan version. Store in the fridge for up to 4 days or freeze without the cream to add later when reheating.
