- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups potatoes, diced
- 2 cups mixed vegetables (peas, green beans, corn)
- 1 cup heavy cream or coconut milk
- Salt and pepper to taste
- Fresh herbs (parsley or thyme) for garnish
- Crusty bread for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté for 5–7 minutes until softened.
- Stir in garlic and cook for 1 minute.
- Pour in vegetable broth and add potatoes. Bring to a boil, then reduce heat and simmer for 10–15 minutes until potatoes are tender.
- Add mixed vegetables and simmer for 5 more minutes.
- Stir in heavy cream or coconut milk. Season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs and a side of crusty bread.
Notes
For a thicker texture, blend part of the soup before adding the cream. Use coconut milk for a dairy-free or vegan version. Store in the fridge for up to 4 days or freeze without the cream to add later when reheating.
