- ½ cup unsweetened cocoa powder

- 1 cup whole milk or buttermilk
- 1 tsp vanilla extract
- 10–12 chocolate sandwich cookies, crushed (reserve some for decoration)
- 1 cup unsalted butter, room temperature (for frosting)
- 3–4 cups powdered sugar, sifted
- 2–3 tbsp heavy cream or milk
- 1 tsp vanilla extract
- Pinch of salt
- Optional: extra crushed cookies, cookie halves, crumbs, or chocolate shavings for topping
Instructions
- Preheat oven to 350°F (175°C). Grease two 8-inch cake pans and line bottoms with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
- In a mixer, cream butter and sugar until light and fluffy (3–4 minutes). Beat in eggs one at a time, then vanilla.
- Alternate adding dry ingredients and milk: add 1/3 of dry mix, then half the milk, mix, repeat, ending with dry. Mix until just combined.
- Gently fold in crushed cookies.
- Divide batter into pans. Bake 25–30 minutes or until a toothpick comes out with moist crumbs.
- Let cakes cool in pans 10 minutes, then transfer to racks to cool completely. Level tops if needed.
- For frosting: beat butter until smooth. Gradually add powdered sugar, vanilla, salt, and cream. Fold in crushed cookies.
- Layer cakes with frosting between. Frost top and sides. Decorate with cookie halves or crumbs. Chill briefly to set if desired.
Notes
Use room-temp ingredients for better texture. Don’t overmix. Crush cookies by hand for chunky texture. Cool cakes fully before frosting. Adjust frosting consistency by chilling or adding cream. For a minimalist style, smooth the sides and top and use cookie halves as garnish.
