Description

Soft, cake-like cookies filled with crushed Oreo pieces, perfect for any crowd-pleasing treat.


Ingredients

  • 1 cup salted butter (at room temperature)
  • 1 cup white sugar
  • 1 large egg
  • 1.5 teaspoons vanilla extract
  • 2 cups plus 2 tablespoons all-purpose flour (spooned and leveled)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 10 Oreo cookies (plus 23 more for topping)

Instructions

  1. Preheat the oven to 350°F and line baking trays with parchment paper.
  2. Crush 10 Oreo cookies in a zip lock bag until no large pieces remain and set aside.
  3. In a large bowl, cream butter and sugar together until light and fluffy, about 5 minutes.
  4. Add the egg and vanilla, mixing until well incorporated.
  5. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  6. Add the dry ingredients to the wet ingredients, mixing until well combined.
  7. Fold in the crushed Oreo cookies.
  8. Scoop 3 tablespoons of dough into balls and place on the baking trays 2 inches apart. Press extra crushed Oreo pieces on top of each ball.
  9. Bake the cookies for 11 minutes or until the bottoms are golden brown.
  10. Let cool on the baking sheet before transferring to a wire rack.

Notes

Use room temperature butter for even creaming. Don’t overmix once you add flour. If the dough feels too soft, chill for 15 minutes to help maintain shape.
