- 3 large eggs
- 1/4 cup honey or maple syrup
- 1 cup almond flour
- 1/2 cup blueberries
- 1 teaspoon vanilla extract

Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, blend the cottage cheese, eggs, honey, and vanilla extract until smooth.
- Stir in the almond flour, baking powder, and salt until fully combined.
- Gently fold in the blueberries.
- Drop spoonfuls of the batter onto the prepared baking sheet.
- Bake for 20-25 minutes or until lightly golden and fluffy.
- Allow to cool slightly before serving.
